KAZE

KAZE is named after “the winds.”
A wind is crossed over from Scotland,
a wind is blowing from Mt. Bandai to Lake Inawashiro,
and a wind is aroused from the passion of the distillers.
When the three winds become one in the barrel,
this whiskey is complete.

About KAZE whisky

New make is a whisky that has not aged and is still crystal clear.
In the spring of 2021, founder Shunsuke Koike brought the new make back to Aizu,
Japan, which was carefully crafted with soil, water, and fire in Scotland.
The fresh new make has a layered aroma of savory grains and elegant herbaceous notes.
He saw the endless possibilities, and began collecting and aging 189 barrels of 24
different types of new make from all over the world.
After three years, the new make he fostered has evolved into a golden whisky, and is
now on its way to you with the wind.

Shunsuke traveled to Scotland himself, visiting more than 60 distilleries.
His passion for whisky resonated with the local makers, and established a lot of trust and bonds with them.
He too was strongly moved by their craftsmanship and ideas.
Eventually, the desire to grow those high-quality new makes in Aizu grew in his heart, leading him to decide to bring them back with him along with the Scottish wind.

different
types of barrels

The new make is a liquid full of rich aroma, yet still clear, pure, and transparent.
This pristine new make is transformed into an amber color by the barrels, and inherits their characteristic aromas and flavors.
Shunsuke collected 189 barrels of 24 different types from Europe, the United States, Central and South America, and Japan.

Each barrel has its own history.
Not only new casks but also old ones can be used, and the aging varies greatly depending on what was in it before.
By adding a new history of new make to the history of the barrels, each individuality overlaps and a new whiskey is created.
Shunsuke thoughtfully filled the casks with new make while imagining such a long story.

Scotland is a comfortable place to live
the year, with little difference in temperature.
Whisky grown in such a pleasant environment
matures slowly.


On the other hand, Aizu, where KAZE is grown,
is 550 meters above sea level and surrounded by
forests, with a view of Mt. Bandai to the north
and Lake Inawashiro to the south.

In spring, melted snow flows through the
streams,
in summer, lush green trees form a nurturing
forest.
In autumn, heads of rice hang down,
and in winter, mountains are covered with
falling snow.

Aizu is a region with distinct seasonal hues, with
temperatures that vary by more than 40 degrees
throughout the year.
The new make has grown up in a harsh
environment away from home soon after its
birth, resulting in a combination of gentleness
and toughness.
After 36 months of sleep, the new make has
awakened to become a special whisky.

Two waters of
different quality

Scotch-making uses medium-hard water, which is characteristic of Europe.
Harder water gives whiskey more character.
KAZE, in addition, is diluted with the water from Aizu.
We use Ryugasawa spring water, which is representative of the Bandai West Foothills spring group, one of the 100 best waters in Japan. The hardness of the water is 24 degrees, which is ultra soft.
This 70-year-old snowmelt gives the whisky a light and mellow taste.
Created by the new make made from Scottish water and tenderly enveloped by the great water of Japan, Shunsuke must have imagined this miracle.

To the north of Tenkyo Distillery rises Mt. Bandai, one of the most famous mountains in Fukushima.
The high elevation of the region keeps the temperature of the groundwater constantly low, thus slowly cooled water adds sweetness and mellowness to the whisky. The Ryugasawa spring water, which makes our whisky more delicious, is indeed a treasure of water for us.
Created by the new make made from Scottish water and tenderly enveloped by the great water of Japan, Shunsuke must have imagined this miracle.

Whisky that connects

Awakened from a three-year sleep, the blended whisky is created by blending only what the blender sees fit, barrel by barrel, assessing the aging conditions. This is the moment for the new makes, born together in Scotland, to reunite after three years. This is the birth of a whisky that connects Scotland and Japan, as envisioned by Shunsuke, who loved the connection with the people of Scotland.

The founder, Shunsuke Koike, stored fifty-eight types of new make brought back from Scotland in more than a hundred casks. This blended whiskey is a blend of those matured at the foot of the Mt. Bandai.


Nose:

Floral and sweet aroma reminiscent of vanilla and caramel

Palate:

Savory and rich. Fruity and creamy sweetness at first, followed by toasted brown sugar, a hint of bitterness and smokiness.

Finish:

Mild aftertaste with creamy sweetness

A new Japanese whisky
nurtured by the strict but
rich nature in Aizu

Mt. Bandai is a famous 1,816-meter-high peak representing Fukushima.
Known affectionately as "Father Mountain” in Japan, this independent peak is an active volcano with four distinct seasons, making it a cradle of harsh yet spectacular nature. In 2023, Tenkyo Distillery opened at the foot of this wonderful mountain.
Located near the Bandai West Foothills Spring Group, which wells up from the majestic nature at the foot of Mt. Bandai, our distillery produces a new Japanese whisky using Ryugasawa spring water, selected as one of the 100 best waters in Japan.
